Eat Like Me: A quick and healthy dinner for one!

I had to dine solo tonight so I used my Griddler again to make a meal big enough for just one. My "cooking" got started later than I had hoped so instead of roasting red potatoes in the oven I switched my starch to long grain wild rice instead. I had two options, microwave quick cook (done in 90 seconds) or stove top quick cook (done in 5 minutes) -- I chose the stove top option and figured I would save the 90 second pouch for a night where I am really behind schedule. Along with my rice I had a Perdue Perfect Portion Italian chicken breast and some steamed Brussels sprouts. I was happy to get a good balanced meal in despite it just being me eating it. I am working on another Q&A set and hope to have it done soon - thanks for your patience with me as I adjust to the life of a mom!

This Meal Provides Approximately: Grains = 2 ounces (-whole), Vegetables = 1 cup, Meat & Beans = 3.5 ounces, Oils = minimal
