Homemade Peppermint Patties

1 egg white

4 cups powdered sugar

1/3 cup light corn syrup

1/2 teaspoon peppermint extract

cornstarch for dusting

1 bag, 16 oz.  semi-sweet chocolate chips

In a non-plastic bowl, beat egg white until it is stiff and forms peaks.  Slowly add powdered sugar using a mixer on low speed. Add corn syrup and extract.  Knead the dough with your hands until it is smooth.  {Have your kids do this part - their hands will pick up the peppermint scent.} Dust a pastry cloth and rolling pin with a bit of corn starch.  Roll out peppermint dough to 1/4" thick. Punch out circles using a cookie cutter or bottom of glass jar.  Place on cookie sheets and put in the refrigerator for about 40 minutes to chill.   

Melt the chocolate chips in the microwave, starting at 1 minute, then if it needs more time, 20 second intervals.  Stir until smooth.  Drop in patty and cover in chocolate.  Using 2 forks, one in each hand, lift the coated mint out of the chocolate. Scrape bottom of forks on the edge of the bowl to remove excess chocolate.  Place on wax or parchment paper.  Chill for about 30 minutes, if you can resist that long.

    If you keep them in the fridge, the chocolate stays hard. If not, they get a little soft on the counter. I like them in the fridge better.

    Could you use confectioners sugar in place of the corn starch for rolling out? This is a recipe I will try!
