User post: Coca Cola Cake

I was searching for ideas and tips on using soda (aka "coke" if you're in the South) in cakes in preparation for this month's Iron Cupcake: Earth challenge (soda pop is the theme ingredient). And that's when I found it. And once I found it, I had to have it. Do you ever get those uncontrollable urges (needs) to bake something? What is *it*? Coca Cola Cake. I've never had it before. I found it on Southern Plate. But once I read about it with the cocoa and the marshmallows and the cocoa I had to have it. The coca cola addition was more a curiosity to me than anything else. I was no longer thinking about Iron Cupcake, I was only thinking about tasting this cake.

So I stopped at the store on the way home from work with 2 things on my list: marshmallows and a bottle of Coke. I had everything else I needed at home. And like a woman possessed, I baked. I wasn't entirely sure what I was going to do with 13x9 inches of cake when I was the only one there to eat it but that was not a good enough reason to stop.

    i tried to make one once but it ended up tasting like a brownie/cake thing it was still good though!

    All of my cakes are made with soda.

    1 cake mix

    1 12 0z. can of soda

    Mix and bake

    This was the "birthday cake" for my kids growing up. One of the boys liked pecans in the frosting. Awesome addicting sweet sweet cake.

    Oh here's others, too! Vanilla cake mix with cream soda with vanilla icing. Lemon pound cake mix with Sprite or Dew with powdered sugar, Orange cake mix with Sunkist soda with cream cheese icing. (That's my favorite with drained mandarin oranges)
