User post: Appetizers For An At House Candle Party???

So I am in need for appetizers at this candle party I am throwing in a few days. I plan to make a large batch of margaritas and mexican pinwheels (tortillas rolled up with meat, cream cheese mixed with salsa, lettuce & tomato). I am thinking there will be about 15 or so people. I don't want to make a  meal, some may have eaten already, but I do think there should be some food to munch on.

Maybe 7 layer dip (refried beans, sour cream, guacomole, shredded cheese, tomato, olives & onion)?

Does anyone have any suggestions for appetizers that tie into the mexican food theme?

Something simple?

    The best chile con queso ever:

    One large block Velveeta

    One can RoTel Tomatoes and Chiles

    One can mushroom soup

    Put everything in your crock pot and turn it on. Stir occasionally to blend once everything starts to melt. Serve directly from crockpot with tortilla chips.

    If Mexican food is going to be your theme then you can do all sorts of appetizers. First I would start with making that 7 layer dip, but don't add the avacado. I would make avacado dip and serve it with chips. Make a tray with quesadillas, warm flour tortillas and cheese or you can also make them with chicken. Canned chicken works great for this recipe. You could make really fresh salsa as well to go with...I wouldn't make to much food since it's a candle party but these simple things should make for great party food...

    Some Nachos would be good, but with a quality chip and cheese. One of my favs is black and white nachos. They're nachos with refried black beans and monterrey ( or mozarella) white cheese. MMmmm..

    sure thing....Steakhouse Fajita is great and inter acitve. It will be a big hit.

    If you have a grill outside you can pick up a nice sirloin. Marinated it with olive oil, garlic, salt, pepper, oregano, fresh llme. (you might find a mexican spice package in groc for quick ease)

    sautee the Mexican veggies and get guac and sour cream, fresh tomatoes, and make sure you use a hot skillet and cut steak on a angle over the top and let people enjoy!

    In addition to the margaritas, also offer iced tea or bottled water. You are correct in not offering too many heavy foods. Just three or 4 finger foods will do. You want foods that can be held at room temperature. I would go with the con queso because it can easily be rewarmed in the microwave. The pinwheels will be a big hit. Offer green and red salsas. I have made the following recipe any times. It disappears fast. It's best at room temperature

    Jalapeno Cheese Bake

    Butter a 9 x 13 pan.

    10 oz grated cheddar cheese

    5-6 canned jalapenos, seeded and cut into thin strips

    10 oz. Monterrey Jack cheese

    7 beaten eggs

    Layer the first three ingredients in order. Pat down slightly. Pour beaten eggs over all, making certain egg covers all of the cheese. Bake at 325 for 45 minutes. Dust lightly with paprika. Cool and cut into squares.

    My husband and I LOVE Mexican food and I usually make these 2 dishes when we're having a mexican craving. Which is usually ALWAYLS! ;)

    Make your own bean dip with 1 can refried beans, 15-16 ounces (whole or fat free), 4-6 ounces sour cream, (whole or low fat) and your favorite salsa, to taste and desired consistency, 4, 6 or 8 ounces. Again to your taste.

    I usually make 2 batches, one mild and one hot. Serve with different styles of tortilla chips, yellow and white corn, baked or regular. Have some mashed avacado on the side, with just a dash of salt and lime.

    For "dessert", take flour tortillas, as many as you need, and cut in 4 triangles each. Spray a thin layer of the "spray butter" on each one, then sprinkle sugar (or Splenda) and cinnamon on each one and bake in a 300 degree oven until dry and crispy. They should begin to brown on the edges. Okay...now I'm hungry!! ;-)

    chili rellenos, or chili poppers. You can make them with peppers that are not hot. They are small and easy to prepare. I would look for light dishes and of course make serveral different types of beverages. Also offer a pastry and coffee or tea in case your guests are coffee lovers...I would try to keep it simple like I said in my other post. Good luck to you sounds like a lot of fun...

    What about those cinnamon crisps, can't remember the name... I have made them two ways-neither way is traditional- 1. Take wonton wrapper, premade from the store, lay them on a greased baking sheet, coat with melted butter and cinnamon and sugar. 2. Use flaky homemade(or store bought) pie crust and roll it into sticks. Coat with melted butter and roll in cinnamon and sugar. Goes great with mexican as a dessert.
