My new addiction: Pesto Pizza

I fell in love with Amy's Frozen Pesto Pizza while shopping for a good healthy lunch at the local Co-Op. So I decided to make it myself at home. This is really a fast and easy recipe for if you get home late and want something hot and yummy.

1 Boboli Whole Wheat Pizza crust (or other pre-made dough)
3-4 ounces pesto sauce (store-bought or home-made)
2 cups shredded part-skim milk mozzarella cheese (or your favorite pizza cheese)

Your toppings of choice, I recommend:
Broccoli
Tomato
Mushroom

1. Pre-heat oven at 450 degrees
2. Place pizza crust on an oiled baking sheet or stone
3. Spread the pesto sauce onto the dough -- if you get the store bought you might want to let it seperate first, so that it isn't as oily.
4. Sprinkle 1 cup of the shredded cheese over the sauce
5. Add your toppings of choice
6. Sprinkle the rest of the cheese, put in the oven and bake for 10-12 minutes (or until pizza dough instructions say)

I make pizza using my home made pesto from basil, etc. and top with chopped artichoke hearts, olives, roasted peppers and some grated cheese. After it is baked

we put thinly sliced tomatoes (from the garden) and parmesan cheese with a little sprinkle of red pepper. Um, so good.

I know, I know. I've been slacking on them. Been busy with some other things lately hehe. And nothing has inspired me recently, I'll see if I can come up with something just for you ;)
