My husband came across a great-looking General Tso’s Chicken recipe by Joanne Lutynec from Slash Food. He sent me an email that had the link and a subject line of “want”. It was pretty clear.
I used leg and thigh meat instead of chicken breast b/c it’s much softer, but it took me a really long time to de-bone the chicken since I have no way of getting it boneless and skinless here. The rest of the recipe went fairly quickly.
I really liked the use of egg in the batter b/c the batter puffed up
like little clouds! The sauce for the chicken was also very good, it
had just the perfect amount of flavor, tang, and spiciness! Next time I
will double the recipe so I have more for my chicken and some left over
for putting on the broccoli that I made with it. I can image the
sauce, which is vegan, would make an excellent sauce for fried tofu,
green beans, or a stir fry. Naturally, since I can’t eat sugar, I
replaced it 1:1 with granular fructose.
